The Cupcake Lady Gluten Free Strawberry Cupcakes

This Friday is Valentines day and what better way than to make something delicious for your love one.

My philosophy is to create things that are not complicated as a mother of three I am always looking for ways to cook delicious treats with minimal fuss.

These Gluten Free Strawberry Cupcakes are to die for and are always a winner.

I hope you and your other half can enjoy one with a cup of coffee and a strawberry cupcake.


The Cupcake Lady

In antipacipation for Valentines Day!!!!


important- I use White wings Gluten free Self raising flour, I found to be the best that rise well.

  • 100g unsalted butter, softened
  • ½ cup sugar
  • 1 teaspoon vanilla essence
  • 2 large eggs
  • 1 ½ cups Gluten Free Self Raising  flour
  • 1 teaspoon baking powder
  • ½ cup milk
  • 2 cups frozen and thawed strawberries (puree)
  • a punnet fresh strawberries


*Pre-heat oven to 180c and set up 12 cupcake cases in a muffin tin
*Place butter, sugar, vanilla in an electric mixer and mix until creamy then eggs and beat
*add SR flour, Baking powder, milk and strawberry puree  (keep 1/4 cup aside for icing) and beat
*fill the cupcakes case 3/4 to allow rise and bake
*Bake for 15-18 minutes allow to cool before icing.

Strawberry Icing

*3 cups icing sugar
*150 butter softened
*1/4 strawberry puree 

Place all ingredients in an electric mixer and beat until smooth, pipe the icing onto the cupcake and decorate with a fresh strawberry 

and Viola!!!! enjoy
